As the old saying goes, “Go green or go home!” March is the perfect month to start getting your greens in with all of the fresh produce that is now in season. Health Benefits of Asparagus

It may look like a simple stalk, but asparagus packs some real nutritional punch. Low in calories and high in nutrients, asparagus is full of vitamins A, K, B6, C and E, as well as fiber and protein. Asparagus is also rich in antioxidants that help protect cells from damage and has been linked to improved digestion. To top it off, it contains compounds called saponins which can help reduce inflammation throughout the body. Not bad for such a small veggie!


Types of Asparagus

When you head to 3 Guys From Brooklyn for your next grocery run, you will find three types of asparagus on display—green, white and purple. While they all have similar nutrient profiles, there are some differences between them worth noting! Green asparagus has a slightly bitter flavor while white asparagus tends to be milder; purple asparagus is sweet with a hint of earthy flavor. All three types are best enjoyed when cooked al dente—meaning they should still be slightly crunchy when served.


Preparing & Cooking Asparagus

Before cooking any type of asparagus, make sure you give them a thorough rinse under cool water first. Then trim about one inch off the end of each stalk (this helps remove any tough fibers). Once prepped, you can grill or roast your stalks with just a drizzle of olive oil and some salt & pepper—that’s it!
