Hello Brooklyn! As March comes to a close - we want to put a spotlight on all the great green veggies we’ve celebrated during ‘Ready, Set, GREEN’ month at 3 Guys From Brooklyn. We’ve been celebrating the season with all sorts of different green veggies; from avocados to spinach to leeks and asparagus. It's time to get green with us and learn why these in-season veggies should be a part of your daily diet. Let’s explore the health benefits, diverse ways of preparation, and reasons why you want more in your daily diet.


Avocados are one of the most popular green vegetables around. Not only do they have a unique taste, but they also provide a wide range of health benefits. They contain healthy fats that can help reduce cholesterol levels and keep your heart healthy. In addition to this, avocados are high in fiber which can help aid digestion and make you feel fuller for longer periods of time. Avocados can be used in many dishes such as salads, sandwiches or even smoothies! Their creamy texture makes them incredibly versatile and delicious no matter how you choose to prepare them.


Spinach is another great source of dietary fiber as well as vitamins A and C which help strengthen your immune system. This leafy green vegetable can be cooked or eaten raw depending on how you like it best. Spinach is also very low in calories making it an ideal choice for those watching their waistlines while still getting essential nutrients into their diet. You can use it in salads, quiches or even soups for a quick and nutritious meal any time of day!


Leeks are an often overlooked member of the allium family that have large amounts of vitamins A & K as well as calcium & iron making them perfect for maintaining strong bones & teeth along with healthy skin & nails. Leeks are great when used either raw or cooked depending on what type of dish you’re preparing them for – whether it be a soup or salad!


And don’t forget about Asparagus – this veggie is chock full of Vitamin B6 which helps produce new blood cells in our bodies making them perfect for keeping energy levels up throughout the day! Asparagus can be roasted, grilled or simply boiled – whichever way you choose to prepare them they will always add flavor & texture to any dish! Ready…Set…GREEN!!
